Abstract: All aspects of the operation and management of professional kitchens are examined in this comprehensive, yet practical, text for both chefs and food service managers. Information is presented in two major sections: the professional chef and kitchen management. The history of the foodservice industry and the advancement of the culinary arts as a profession are discussed.
