What is Fatty Acids in Meat about?

The fat content and fatty acid composition of meat are affected by the processes of muscle growth and development outlined in Chapter 3 and can also be manipulated by animal diet, although more so in monogastrics than in ruminants. The fatty acid composition of meat has effects on the oxidation of meat lipids outlined in Chapter 5 and has a strong influence on meat flavor (Chapter 9).
