Paanipuri or golgappa is a popular Indian snack made of semolina-based puris and a spicy mint and tamarind water. To make the puris, a dough of semolina, salt and water is kneaded, left to rest, then rolled and cut into rounds. The rounds are deep fried until crisp. For the spicy water, mint, coriander, green chilies, tamarind and spices are blended into water and chilled. Accompaniments like boiled potatoes, chickpeas and sprouts are served alongside the puris and spicy water.
