The study evaluates the impact of soybean moisture content at harvest and storage time on the phosphatides content in soybean oil and the activity of phospholipase D. Higher initial moisture levels in soybeans resulted in a higher initial content of total phosphatides, which decreased over time, while lower moisture levels maintained their phosphatide content. The findings suggest that non-hydratable phosphatides content is influenced by both the moisture level at harvest and the enzymatic activity, emphasi
