This study evaluated using oil density and refractive index measurements to predict the oleic/linoleic acid ratio in peanut oils, which influences oxidative stability. Gas chromatography was used to determine fatty acid profiles of normal and high oleic peanut oils and blends. Density, refractive index, oleic acid content, and linoleic acid content all correlated strongly for blends with oleic/linoleic ratios from 2 to 16.
