This study compares stationary and agitated solid-substrate fermentation of soybeans using Rhizopus spp. for tempe production. The findings indicate that agitated fermentation in a rotary-drum bioreactor can improve homogeneity and control temperature and gas gradients, but different Rhizopus species respond differently to agitation. Specifically, R. microsporus tolerated agitation well, while R. oligosporus showed significant negative effects on fermentation parameters.
