Ein frisch aufgeschlossenes Dextrin auf Basis Kartoffelstarke setzt sich aus -offensichtlich nativen -Granula von 100 bis 200 nm Durchmesser zusammen. Nach einem unvollstandigen Aufschlufl bleiben diese Granula trotz monatelanger Reife unverandert; es 1aRt sich lediglich eine starkere Agglomeration der Granula feststellen. Hingegen durchlaufen die Granula eines vollstandig aufgeschlossenen Dextrins wahrend der Reife einen Quellungs-und Solvatationsprozea, wobei die Phasengrenzen zwischen den Granula und dem Losungsmittel Wasser mehr und mehr verschwinden.
