There are three types of amylases - alpha, beta, and gamma. Alpha-amylase is found in humans and helps digest starch by breaking it down into sugars. Beta-amylase is found in plants and helps break down starch into maltose during fruit ripening. It also plays a role in beer and bread making. Gamma-amylase is less common and breaks down amylose and amylopectin into glucose. Each amylase has a different function and optimal pH and temperature conditions.
