This study examined the effects of dietary acetic acid on serum lipid levels in rats fed a cholesterol-rich diet. Rats were fed one of three diets for 19 days: 1) a normal diet, 2) a 1% cholesterol diet, or 3) a 1% cholesterol diet with 0.3% acetic acid. Compared to rats fed only the cholesterol diet, rats fed the cholesterol diet with acetic acid had significantly lower serum total cholesterol and triglyceride levels.
