This recipe makes 12 strawberry shortcake cupcakes. Each cupcake has a whole strawberry and vanilla sandwich biscuit at the bottom, covered with a vanilla cake batter. They are topped with a strawberry ice cream flavored icing and freeze-dried strawberries. To make the cupcakes, strawberries and biscuits are placed in cupcake liners before adding the cake batter. The cupcakes are baked for 15 minutes then iced once cooled.
