What is Natural Compound-based Interfacial Stabilization of Nanoemulsions about?
Nanoemulsions are predominantly used in the food industry due to their remarkable properties such high bioavailability, solubility, target delivery, improved stability, etc. Nanoemulsions protect food from surrounding environmental conditions by encapsulating the food bioactive compounds. Nanoemulsions are colloidal systems that comprise two different liquids that are immiscible in nature (i.e., oil and water), with one phase being dispersed into another phase as fine droplets with a size ranging from 50 to 1000 nm (Sanguansri and Augustin, 2006). Besides, they have the phenomenal potential of encapsulating a high concentric oil-soluble nutraceutical. Fig. 1 illustrates the schematic representation of a nanoemulsion. Emulsions are described as the dispersion system with droplets being formed in the dispersed phase while the liquid surrounds them is the continuous phase (Tadros, 2004;McClements et al., 2007;Acosta, 2009). For designing and formulating nanoemulsions, emulsifiers are considered predominant as they decrease the interfacial tension between the immiscible liquids due to their absorption at the oil/water interface.
