This study explores the green synthesis of silver nanoparticles (AgNPs) using banana peel extract, which serves as a reducing and capping agent. Characterization of the synthesized AgNPs was conducted using FTIR and SEM, revealing their potential for enhancing the preservation of banana blocks. The results showed that banana blocks coated with sodium carboxymethyl cellulose incorporated with AgNPs exhibited better mold resistance compared to those coated with only sodium carboxymethyl cellulose.
