About this document

Understanding Sugar in Milk by Matt K is a document available to read on EtoBox.

Milk is a white liquid produced by mammary glands and contains the sugar lactose. Lactose can only be digested by the enzyme lactase, which is produced in highest amounts in the small intestine after birth and then declines unless milk is regularly consumed. Milk contains water, fats, proteins, and lactose, and different types of milk like whole, reduced fat, non-fat, soy, and almond are available. Milk is heated when making hot drinks, and the sweetest temperature is around 60-65°C.
