This study investigates the anti-Listeria activity of an oxidation-resistant derivative of pediocin PA-1 (pediocin M31L) and penocin A in a simulated human gut environment. Results show that pediocin M31L is as effective as native pediocin PA-1 and more effective than penocin A against Listeria monocytogenes, with minimal impact on gut commensal bacteria. The findings support the potential use of these bacteriocins as natural food preservatives and therapeutic agents.
