Large yellow croaker (Pseudosciaena crocea) is one important aquacultured marine fish in southern China with annual production of approximately 200,000 metric tons. Fresh fish fillets are highly perishable and could spoil quickly caused by autolytic enzymes and microorganisms during storage due to the high moisture and protein content (Qiu et al., 2014). Although fresh or frozen whole large yellow croaker is still the main product in the market in China, the demand for fish fillet is increasing as it is convenient for consumers to handle at home and also for the fast food industry. Traditionally, fish fillets can be kept at cold temperature or by innovative MAP package method to inhibit the microorganism to extend the shelf life (Arashisar et al., 2004). However, it could not extend the shelf life to a large extent as microorganism and enzyme could still be active at cold temperature or under MAP environment.
