Heating and homogenization can affect the stability of coconut milk emulsions. The study examined the effects of homogenizing and heating fresh coconut milk on its colloidal stability over time. Homogenization reduced emulsion droplet size but increased flocculation, while heating above 80°C caused some coalescence in addition to further flocculation. Both heated and homogenized samples creamed more after storage, with larger cream layers forming due to less efficient packing of flocculated droplets.
