Evaporation occurs when a liquid absorbs heat energy and turns into a gas, with the particles gaining enough energy to overcome molecular attractions. This happens at temperatures lower than the boiling point as surface particles escape. Condensation is the opposite change of state where a gas loses heat energy and turns back into a liquid. Both occur at 100°C (212°F) for water, with evaporation being endothermic as heat is absorbed and condensation being exothermic as heat is released.
