This document discusses a study on extending the shelf life of green bell peppers through active modified atmosphere packaging (MAP) and the use of silica gel crystals as a moisture absorbent. Bell peppers were stored in polypropylene film packages with or without silica gel sachets at 8°C and monitored. MAP achieved an atmosphere of 4.5-4.7% O2 and 7.5-7.8% CO2, reducing respiration rate. Quality was assessed over 49 days in MAP+silica and 42 days in MAP alone, compared to 21 days for refrigerated controls
