This document describes an analytical study that used RP-HPLC to analyze levels of the phenolic antioxidant compound 6-gingerol in rhizomes from 12 different ginger cultivars. 6-Gingerol content ranged from 0.1-0.2% across cultivars. Antioxidant capacity was determined using DPPH and FRAP assays. Cultivars from Rajasthan and Rio De Janero had among the highest levels of 6-gingerol and antioxidant activity, with a significant correlation between the two.
