What is Fouling of Food Processing Equipment about?
When operating a heat exchanger material can be deposited on its surface from either the food being processed or the heat transfer fluid, for example, hot water. This is termed fouling. Its severity increases as the heating temperature increases. If the deposits do not attach firmly to the surface or become dislodged, they may cause problems in the final product and be perceived by the consumer as sediment. Fouling should be minimised wherever possible as it can cause a number of problems, the most serious of which are: l increased cleaning costs in terms of the amounts of detergents used. Both detergent costs and effluent and disposal costs are also increased. l reduced processing times and increased down-time.If the product is well known to always cause a fouling problem, additional issues will be an increased capital outlay, as an oversized heat exchanger will be required, increased energy costs to overcome the thermal resistance of the fouling layer and longer cleaning times.If deposits are not properly removed, the fouling layer may provide a source of nutrients and act as a 'breeding ground' for micro-organisms and biofilms may be formed (Section 36.5).There are three major t
