This study analyzed the effectiveness of using chitosan extracted from shrimp shells as an edible coating on wooden fish (keumamah) to inhibit mold growth. Wooden fish were soaked in 1.5% chitosan solution for varying times between 0-75 minutes, then dried and stored at room temperature for 28 days. Organoleptic properties and mold counts were evaluated weekly.
