Ultrasonic solvent extraction (USE) and hydrodistillation (HD) were compared for isolating volatile compounds from two types of honey - Robinia pseudoacacia L. and Castanea sativa L. HD isolates contained many thermally derived artifacts, while USE extracted the full volatile profile without artifacts. Additionally, USE extracted low molecular weight semi-volatile markers like benzoic, vanillic and phenylacetic acids that were not extracted by HD.
