This study investigates the effects of sodium citrate concentration and soaking time on the properties of instant yellow rice made from Inpago Unsoed Protani rice. The optimal treatment was found to be 7% sodium citrate with a soaking time of 2 hours, resulting in improved physicochemical and sensory qualities. Nutritional analysis indicated significant changes in protein, fat, and ash content after processing.
