This study characterizes the (poly)phenolic profile of fig peel from twelve cultivars harvested in Tuscany, revealing significant variability in (poly)phenol content. A total of 28 (poly)phenolic compounds were identified, with rutin and 5-caffeoylquinic acid being the most abundant in greenish peels, while cyanidin-3-O-rutinoside dominated in dark-violet peels.
