Caffeine is extracted from tea leaves through a multi-step process. Tea leaves are boiled in water to extract caffeine, then sodium carbonate is added to make tannins water-soluble. Methylene chloride is used to extract caffeine from the tea solution. The organic layer containing caffeine is collected and dried with sodium sulfate. The crude caffeine is purified through recrystallization using ethanol, yielding purified caffeine crystals.
