Enzymes are made of proteins. They speed up chemical reactions by lowering the activation energy. During a reaction, a substrate binds to the active site of an enzyme. The enzyme catalyzes the reaction, converting the substrate to products, but is not consumed in the process. The two main environmental conditions that can affect enzyme activity are pH and temperature. Different enzymes have different optimal pH and temperature levels for maximum activity.
