Electronic nose is rapidly becoming a valuable tool for the organoleptic evaluation of food parameters related to taste and smell. An electronic nose is generally composed of a chemical sensing system and a pattern recognition system (e.g., artificial neural network) in this paper, we briefly describe neural networks, electronic nose and show some results from a prototype electronic nose.
