This document summarizes a study that analyzed the quality of red ginger (Zingiber officinale Var. Rubrum) simplicia (dried form) when dried at different temperatures. Treatments of drying at 90°C (W1), 100°C (W2), 110°C (W3) and 120°C (W4) were used. Observations of water content, ash content, starch levels, oleoresin levels, and vitamin C were made.
