This study characterized the composition of coconut testa, coconut kernel, and their oils. The major components of the samples ranged from 34-63% fat. Oils from testa contained more monounsaturated and polyunsaturated fatty acids than other coconut oil samples. Oils from coconut testa also contained higher levels of natural antioxidants like tocopherols, tocotrienols, and phenolic compounds compared to coconut kernel oil.
