Fungus damage is a primary defect in green coffee beans. A single fungus damaged bean counts as one full defect. Fungus can infect beans during harvesting, processing, or storage if temperature and humidity levels allow fungal growth. Fungus damage may lead to fermented, moldy, earthy, dirty or phenolic tastes in coffee and poses a risk of ochratoxin contamination. Proper drying and storage is needed to prevent fungus growth on coffee beans.
