About this document
Cocoa Bean Harvesting and Fermentation Guide by Roy De Guzman is a document available to read on EtoBox.
Pods containing cocoa beans grow on cocoa trees. Ripe pods are harvested manually by cutting them from the tree. Within a week of harvesting, the pods are opened to extract the wet beans inside. The best way to open pods is by using a wooden club to split them in half, making it easy to remove the beans by hand. After extraction, the beans undergo a fermentation and drying process before being bagged for delivery.
