The study investigates the extraction and hydrolysis of collagen peptides from Pangasius fish skin to enhance antioxidant activity. The extraction yielded 15.07% gelatin with a pH of 4.76 and a degree of hydrolysis of 48.06%, resulting in various peptide fractions with antioxidant activities measured by ABTS assays. The findings suggest that collagen peptides from Pangasius skin could serve as a halal alternative source of antioxidants for food and health applications.
