The 4-hour/2-hour rule allows food businesses to hold food between 5°C and 60°C for short periods of time, as bacteria takes time to grow to unsafe levels. Food can be held for less than 2 hours in the temperature danger zone and then refrigerated or reheated. The total time in the danger zone must not exceed 4 hours. Food businesses must document and record their compliance with the time and temperature requirements to properly apply the 4-hour/2-hour rule.
