The microwave-assisted extraction (MAE) of bioactive compounds from norabogori fruit was optimized using Box-Behnken design to obtain the maximum yield of total phenolic content. A microwave power of 570 W, 67% ethanol concentration, and liquid:solid ratio of 40 mL/g for 15 min resulted in the maximum recovery of 6824.38 g GAE/100 g of total phenolic content (TPC). Reverse-phase high-performance liquid chromatography (RP-HPLC) was used to evaluate the extract and identify the bioactive compounds. Kaempferol, rutin, ellagic acid, syringic acid, and catechin are some of the distinct polyphenols revealed in the norabogori extract. The whole extract was encapsulated by sodium alginate in a ratio of 1:2 (extract: NaAlg) selected from ratios like 1:2, 1:4, and 1:8 and giving maximum in vitro release of the extract in the intestine. The particle size of microencapsulate determined showed a gradual reduction in size from 0.92 to 0.68 mm with the increase in the concentration of sodium alginate.
