A method was developed to determine sodium carboxymethylcellulose (CMC) in food products containing multiple hydrocolloids. The method involves digesting proteins with papain, precipitating alginate and pectic acid with calcium chloride, and selectively precipitating CMC using cetylpyridinium chloride. The CMC residue is then hydrolyzed and quantified using the 2,7-naphthalenediol test. Recoveries of 75-86% were obtained from complex foods when 10 mg of CMC was added.
