This study investigates the effect of xanthan-chitosan-xanthan double layer encapsulation on the survival of Bifidobacterium BB01 in yogurt and simulated gastrointestinal conditions. Results show that the encapsulation significantly enhances the viability of B. BB01 during storage at different temperatures and under gastrointestinal stress compared to free cells. The findings suggest that these new encapsulation systems are effective for improving probiotic survival in food applications.
