About this document

Osmotic Dehydration of Yacon Study by EdinberSP is a document available to read on EtoBox.

This document summarizes a study on the osmotic dehydration of yacon roots using glycerol and sorbitol as osmotic agents. Yacon roots were treated using varying temperatures (30 and 50°C) and concentrations of glycerol or sorbitol (30, 50, and 70%). Effective water diffusivity was calculated and found to be in the range of 5.82×10−10 to 1.29×10−10 m2/s for glycerol tests and 3.82×10−10 to 1.33×10−10 m2/s for sorbitol tests. The greatest reduction in water activity was achieved using 70% glycerol at 50
