The six major flavanols present in fresh shoots of tea (Camellia sine&s L.) were extracted, purified, and oxidized in vitro with a soluble and partially purified polyphenol oxidase preparation, also extracted from fresh tea shoots. Besides different forms of theaflavin gallate, two species of theaflavin were observed. When the six flavanols were oxidized together, epigallocatechin limited total thealIavin production.
