This study purified and characterized β-glucosidase from broccoli (Brassica oleracea) for the first time. β-Glucosidase was purified using ammonium sulfate precipitation and hydrophobic interaction chromatography. It was found to be a dimer made of one major 80 kD subunit and one minor 50 kD subunit, with optimal pH of 6.0 and temperature of 35°C.
