Abstract: Home drying is an easy, convenient and economical way to preserve foods. Directions for dehydrating foods at home either with sun drying or artificial heat are described in a handbook for preparing dried vegetables, fruits and herbs. Almost any plant food can be dried: apples, apricots, bananas, beans, beets, berries, carrots, corn, garlic, mushrooms, onion, parsley, lemon peel, peaches, pears, plums, peas, peppers, squash, tomatoes, etc. Suggested uses for 45 dried herbs are discussed. Techniques for drying meats, milk and eggs and making fruit leathers are also described. Tasty and nutritious recipes for cooking with dried foods are presented. Instructions for building a home top-of-the-stove drier are included
