This study investigates the impact of moisture content on the cracking efficiency and whole kernel recovery of oil palm nuts using a locally fabricated cracker. Results indicate that optimal moisture content for maximum recovery is between 14% and 18%, with cracking speeds of 1000 to 1400 rpm yielding the best results. The findings highlight the importance of moisture content and cracking speed in enhancing kernel recovery during the processing of oil palm nuts.
