Hyperspectral imaging was used to nondestructively predict the soluble solids content and pH of lychee fruits and discriminate maturity. Two hyperspectral imaging systems in the visible/near-infrared and long-wave near-infrared ranges were compared. The long-wave near-infrared system performed better for quality prediction and maturity discrimination.
