This study investigated the effect of different nozzle types on particle size and flowability of spray-dried protein powders. A lab-scale spray dryer was used to dry a catalase solution with a two-fluid nozzle, 60 kHz ultrasonic nozzle, or 25 kHz ultrasonic nozzle. The two-fluid nozzle produced particles from 1-20 μm with an irregular surface, while the 60 kHz nozzle had similar sized particles but fewer fines.
