This document describes three analytical methods for determining components of fermented products: 1) spectrophotometric determination of ethanol using potassium dichromate as the oxidizing agent, 2) estimation of reducing sugars using the 3,5-dinitrosalicylic acid (DNS) method, and 3) gas chromatography to estimate ethanol using a flame ionization detector.
