This thesis studied novel organogels prepared using mixtures of Span 80 and Tween 80 for use in food and pharmaceutical industries. Various organogel compositions were prepared and characterized. Microscopic analysis showed the organogels consisted of globular particles whose size depended on water content. Thermal analysis demonstrated the organogels had good thermal stability up to 100°C.
