The study evaluates the effects of sprouting on the nutritional and sensory properties of millet and African breadfruit-based composite diets. Results indicate that sprouting enhances moisture, ash, crude fiber, carbohydrates, and vitamins while reducing fat and protein content. The sensory evaluation shows that while the commercial product NUTREND is more acceptable, the sprouted diets still provide a nutritious alternative for addressing protein-energy malnutrition in developing countries.
