The study investigates the effects of gamma radiation on the textural properties of fresh, dried, and rehydrated oyster mushrooms (Pleurotus ostreatus). Results indicate that irradiation significantly affects texture attributes such as hardness, cohesiveness, and springiness, with optimal changes observed at a dose of 1.5 kGy. The findings support the use of gamma irradiation as a preservation method to enhance shelf life and quality of mushrooms.
