Zein is an alcohol-soluble protein present in amounts of 2.5-10% in corn. It is commonly used to manufacture plastics, paper coatings, adhesives and other products. There are four classes of zein - alpha, beta, gamma, and delta - which are expressed sequentially in maize seeds and interact with each other. Zein from corn is approximately 35% alpha-zein, which includes prominent protein bands of 22 and 24 kDa. Beta-zein does not enter an SDS-PAGE gel without reduction.
