Water can dissolve many polar substances like salt. When salt dissolves in water, it causes the boiling point to increase slightly and the freezing point to decrease. Adding salt raises the boiling point by 0.5°C for every 58g of salt added per liter of water. The freezing point is also depressed, with a saturated salt solution freezing at -21.1°C compared to 0°C for fresh water. These changes occur because salt ions disrupt the hydrogen bonding between water molecules.
