This study analyzed the antioxidant activity, ascorbic acid content, and polyphenol content of the pulp and skins of four grape varieties from Romania: Negru de Drăgăşani, Coarna Neagră, Cardinal, and Victoria. The grape skins had significantly higher levels of ascorbic acid, polyphenols, and antioxidant activity than the pulp.
